you may or may not be interested to know that a woman asked me for a sherried chicken casserole I served at a luncheon. I knew the woman quite well and said sure will you give me your scallop lasagna recipe? She said yes. Well I wrote down the recipe she wanted on a nice card and gave it to her. For weeks I kept asking for her recipe. Well, she finally told me she didn't give out recipes! I felt she could have mentioned that when I first asked! Anyway, I have searched for this recipe for years! I finally found it and am giving it out to anyone who asks with the request that whomever you serve it to, if they ask where did you get this recipe you answer LISA HERTLEIN. Just in case it is her! |

You may not need all of the stock or clam juice, the firmness of the rice and timing are more important than using all of the liquid. Also, you could make this dish without heavy cream. Just omit in the saffron-vermouth reduction. |

Variation
Instead of the shrimp, use one pound of boneless, skinless chicken breasts (about three), cut crosswise into quarter-inch strips. Cook for the same amount of time.
Coconut milk's rich flavor will keep you coming back for more of this substantial soup. A true Brazilian version would include slices of okra, but ours is already so satisfyingly thick that we left it out.

This is a wonderful Thai dish which combines the deliciously rich and creamy flavour of the banana flower with crunchy cashews nuts, the heat of the roasted chilli and all the other ingredients. Banana flowers are actually the buds of the banana plant, which are soaked and shredded for use in salads. They are also available preserved from Asian grocery shops - soak in cold water for 10 minutes and rinse before use.
You can use shreded green pawpaw or carrot for banana flower substition. |
